Simple One Bowl Cake

Everyone needs a simple one bowl cake recipe like this: it’s fast and easy to mix and can be halved or doubled as needed.

At this time of year many people are trying to eat more healthfully, but I think there is always room for cake.

2022 might not feel the most celebratory of New Year’s, but I know there will be bright spots that we can all look forward to.

Or maybe turn an ordinary day into its own celebration with a simple one bowl cake.

Whipping cream replaces oil and butter and gets mixed in to the dry ingredients with the eggs and vanilla.

Just whisk and bake.

The batter will be stiff and will bake into a lovely texture that works well as cupcakes, and single or double-layered cakes.

This recipe makes a 9×9-inch / 23×23 cm single layer cake (or 12-15 cupcakes). You can halve or double the recipe as needed.

You can also vary it by substituting lemon or other extracts for the vanilla, or adding citrus zest.

This recipe can be easily halved or doubled, and bakes up well as cupcakes or layers. The whipping cream eliminates the need for butter or oil and helps make the recipe quick to mix up.

Ingredients
  • 2 cups / 500 ml all-purpose flour
  • 1 cup / 250 ml granulated sugar
  • 1 tablespoon / 15 ml baking powder
  • ½ teaspoon / 2.5 ml salt
  • 1½ cups / 375 ml whipping cream (35% butterfat)
  • 2 eggs
  • 1 teaspoon / 5 ml vanilla
Instructions
  1. Preheat oven to 350 degrees F / 176 degrees C. Grease a 9x9 inch / 23x23 cm baking pan and line the bottom with parchment or wax paper.

  2. Stir together flour, sugar, baking powder and salt in mixing bowl until thoroughly blended.

  3. Add cream, eggs and vanilla and whisk or stir until no dry streaks of flour remain. The batter will be stiff.

  4. Spread into prepared pan and bake for 50-60 minutes, or until cake is lightly browned and a toothpick inserted into the center comes out clean. Let cool for 5 minutes, then remove from pan and cool on a wire rack.

Recipe Notes

Cupcakes: Recipe will make 12-15 cupcakes. Bake at 350 degrees F / 176 degrees C for 25-30 minutes or until lightly browned and a toothpick inserted in center comes out clean.
