Ingredients
  • 2 tablespoons / 30 ml butter
  • 1 medium onion, chopped (about 1 cup / 250 ml)
  • 2 stalks celery, chopped (about 1/2 cup / 125 ml)
  • 6 medium potatoes, peeled and cut into chunks
  • 4 cups / 1 liter chicken or vegetable stock
  • 2 cups / 500 ml milk (or 1-1/2 cups / 375 ml milk and 1/2 cup / 125 ml cream)
  • 1 teaspoon / 5 ml salt
  • 1/2 teaspoon / 2.5 ml ground white pepper
Instructions
  1. Melt butter over medium heat in saucepan.
  2. Add onions, and cook until softened. Add celery and cook 5 minutes longer. Add 1/2 teaspoon / 2.5 ml salt.

  3. Add stock and potatoes. Bring to boiling point, then simmer over low heat until potatoes are tender.

  4. Puree mixture in blender until smooth. Return to pan and add milk, remaining salt and pepper.

  5. Heat to boiling point and serve.
