This recipe is a great way to use up leftover rice. It can be doubled or tripled as needed. You can use regular dairy milk in the recipe, but you will need to keep a close eye on it as it simmers in order to keep it from sticking and burning.

Ingredients
1cup/ 250 ml leftover brown rice
1cup/ 250 ml almond milkor substitute your favorite type of milk
1-1/2teaspoons/ 7.5 ml maple syruphoney or brown sugar
1/4cup/ 60 ml raisins
Pinchsalt
Optional toppings: nutsfruit, jam, preserves...
Instructions
Combine all ingredients in a small saucepan and bring to a boil.
Reduce heat and simmer for 10 minutes, or until rice is very soft and has absorbed most of the milk.
