Ingredients
1cupsof semisweet chocolate chips or grated chocolate
1/2cupwhipping cream
1tablespoonbutter
2teaspoonsliqueur of choiceoptional
Instructions
Put chocolate in small bowl.
Heat cream in microwave or on stove top until bubbles begin to form around edges.
Add butter to chocolate, and pour heat cream over chocolate and butter.
Let sit 2-3 minutes, then stir until chocolate is thoroughly melted and mixture is smooth.
If a few unmelted bits of chocolate remain, heat the mixture in the microwave for 10-20 seconds and then stir again. Repeat as needed.
Add liqueur if using.
Set mixture in fridge to cool until it has set firmly.
You can leave the mixture in the fridge for several days until you are ready to make the truffles. Cover it and let it sit out for about 1/2 hour to soften when you are ready to use it.
Remove from fridge and scoop up 1-1/2 teaspoons of chocolate. Roll into a ball between your clean hands and place on parchment or aluminum foil lined sheet.
(This can get very messy as the chocolate softens. You will need to wash your hands from time to time as you roll the balls).
Continue with remaining chocolate.
You can roll the balls in toasted coconut, nuts, grated chocolate or cocoa powder if desired.
Recipe Notes
You can subsitute dark chocolate for the semisweet chocolate.
To make milk chocolate or white chocolate truffles, reduce the cream to 1/3 cup. The mixture will take longer to become firm.
