This recipe doubles easily, so you can make a double batch and have some ready in the freezer for weekday breakfasts. The applesauce doesn't give a strong apple taste to the waffles, but it does give them a bit of sweetness.

Ingredients
1cupplain yogurt or buttermilk
1cupunsweetened applesauce
1/2cupoil
3eggs
2cupswhole wheat flour
1cupoatmeal
1teaspoonbaking powder
1teaspoonbaking soda
1teaspoonsalt
Instructions
Preheat your waffle iron while you are preparing the batter.
In medium size bowl, beat together yogurt, applesauce, oil and eggs.
In separate bowl, stir together flour, oatmeal, baking powder, baking soda and salt until thoroughly mixed.
Add dry ingredients to yogurt mixture and stir just until blended.
Cook in heated waffle iron, according to the instructions provided for your appliance.
Use a generous 1/4 cup of batter for each waffle.
Keep cooked waffles in a warm oven while you prepare the remaining batter.
